2 red bell peppers, cut into strips
1 yellow bell pepper, cut into strips
1 red or yellow onion, cut into strips
2 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
1 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
5 sweet Italian sausage links
Fresh basil leaves for garnish

Rolls/buns for sandwiches or serve over rice

1. Preheat oven to 450 degrees. Line large rimmed baking sheet with parchment paper.
2. Toss together the peppers, onions, spices and EVOO in a large bowl.
3. Arrange on the baking sheet in a single layer. Place sausages among the vegetables.
4. Bake on center rack until sausage links register 160 degrees - about 20 minute - tossing about half way through.
5. Transfer the baking sheet to oven rack about 6 inches from the heat source and broil until everything appears crisp and golden brown - 2-3 minutes.
6. Remove from oven. Top with basil and serve immediately on your favorite roll.
