2 cups sugar
2 cups flour
1½ teaspoons baking powder
¾ cup (olive) oil
1 teaspoon instant coffee dissolved in 1 cup warm water
6 tablespoons cocoa
1½-2 packages (3.5oz) wafer rolls (french truffle flavor or any can do)

Preheat oven to 350.
Spray bundt pan.
Using an electric mixer, whisk the eggs and sugar for 5 minutes at full speed.
Add the flour and baking powder.
With the mixer on low add the liquids, then increase speed to high and beat for 15-20 seconds until incorporated.
Reduce speed to low and spoon in the cocoa.
Pour half batter into bundt pan.
Place ⅔ of wafer rolls (approximately 18) in a flat layer on top of batter.
Pour in the remaining batter until pan is ¾ full.
Sprinkle the remaining wafer rolls on top (you can slice/break them)
Bake for 1 hour until a toothpick inserted into the center comes out clean.
