24 oz frozen shredded potatoes/hashbrowns
salt and pepper
12 eggs
2 C half and half
1 tsp seasoned salt
1 1/2 C cheddar cheese, shredded
1 1/2 C pepper jack cheese, shredded
2 C chopped ham or your preferred meat. Sausage would also be great.

1. Grease a 9X13 in pan. Add the frozen potatoes to the bottom of the pan. Sprinkle with salt and pepper.
2. In a large bowl, whisk the eggs together. Then add half and half, season salt, cheddar and pepper jack cheese, and ham.
3. Pour over the top of the potatoes. Cover with foil and refrigerate for 2 hours or overnight.
4. Bake uncovered at 350º for 90 minutes. Let rest for 10 minutes before serving.
