16 oz dry rotini
10 oz hard salami, sliced 1/4 inch thick then chopped
3 C grape tomatoes, halved
1 (6 oz) can black olives, sliced
2 C chopped bell peppers
1/2 C chopped red onion
8 oz fresh mozzarella pears
3 oz freshly grated parmesan (3/4 C)
1/2 C chopped fresh parsley
1/3 C chopped fresh basil
(You can add or subtract any of the ingredients to your taste)
1 bottle Zesty Italian dressing

1. Cook pasta according to the direction on the package.
2. Immediately transfer pasta to a rimmed 18 by 13-inch baking sheet and spread out to cool for 15 minutes.
3. While pasta is cooking and cooling, chop the ingredients.
4. Add cooled pasta to an extra large bowl along with salami, tomatoes, olives, bell peppers, red onion, mozzarella pears, parmesan, parsley and basil.
5. Shake dressing and pour over ingredients. Use enough to coat. Toss well and season with salt if needed.
6. Server right away or if prefer chilled, put in refrigerator for 1-2 hours or up to 3 days.
