2 tbsp. extra-virgin olive oil
1 c. medium onion, diced
1 c. red and green bell pepper, diced
salt
ground pepper
4 boneless, skinless chicken breasts
1 c. shredded cheddar cheese
2 tbsp. Cajun seasoning

Directions:
Directions:
1. Preheat oven to 350 degrees. In a large ovenproof skillet over medium heat, heat oil. Add onions and peppers and cook until soft, about 5 minutes. Season with salt and pepper. Remove from heat and let cool slightly

2. With a sharp paring knife, create a pocket in each of the chicken breasts. Stuff each with vegetable mixture, then top with cheddar cheese. Season chicken all over with cajun seasoning, salt and pepper

3. Add chicken to the skillet and bake until cooked through. About 25 minutes
