3/4 lb. Orecchiette Pasta
1 lb. Italian Sausage casing removed
1 Onion diced
1/4-1/2 cup diced roasted Peppers
1 tsp. Garlic minced
1 tsp. Salt
1/2 tsp. Italian Seasoning
1 cup Chicken Both
1 cup Cream (or Half & Half)
2 cups Spinach chopped
1/4 Parmesan Cheese

Directions:

Cook pasta per instructions but leave al dente, reserving some pasta water.

In the meantime, heat a large skillet or Dutch oven and sauté sausage and onion until sausage is browned 4-5 minutes. Add garlic, peppers, salt, and seasoning. Add broth and simmer over medium high heat, stirring often until reduced. Add the cream and heat through. Mix in the spinach and cook until wilted. Gently combine with the pasta sprinkling in the cheese stirring until coated. Add pasta water if necessary.
