3/4 c. fresh cilantro leaves
3/4 c fresh parsley leaves
1/2 c. fresh basil leaves
3 tbsp. virgin olive oil
3 tbsp. fresh orange juice
1 tbsp. fresh lime juice
1/2 tsp. ground cumin
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
2 garlic cloves
24 jumbo shrimp, peeled and deveined ( 1 1/2 lbs)
cooking spray

Directions:

1. combine first 10 ingredients in a food processor: process until smooth. Place in a bowl: add shrimp, tossing to coat. Marinate in refrigerator for 30 min. stirring occasionally.
2. preheat broiler to high
3. Remove shrimp from marinade: thread 6 shrimp onto each skewers. Place skewers on a broiler pan coated with cooking spray: top with remaining marinade. Broil 5 inches from heat for 2 min on each side or until shrimp are done.
