2 cans mixed vegetable (32 oz. total) Veg-All
¼ C chopped onion
½ C mayonnaise
1 C grated cheddar cheese
1 can cream of mushroom soup (can use cream of celery)
½ tube crushed Ritz crackers
½ stick melted butter

Directions:
Directions:
Mix all ingredients, except crackers and butter. Pour into buttered casserole dish. Top with crushed crackers which have been mixed with melted butter. Bake 30-40 minutes at 350º.
