6 red potatoes
2 cups white vinegar
2 tablespoons olive oil
1 tablespoon sea salt
1 teaspoon black pepper
1 tablespoon dried dill (or fresh, if you prefer)

Wash the potatoes thoroughly and slice them into about 1/4-inch thick rounds.

Place the potato rounds in a large bowl or ziplock bag, cover with the white vinegar, and let them marinate for at least 2 hours. For a stronger pickle flavor, let them soak overnight in the refrigerator.

Preheat your oven to 425°F. While the oven is preheating, drain the potatoes and pat them dry with paper towels. It’s important to remove as much vinegar as possible to ensure they bake properly.

In a large bowl, mix together the olive oil, salt, pepper, and dill. Add the dried potato rounds to the bowl and toss until they’re evenly coated.

Arrange the potato rounds in a single layer on a baking sheet lined with parchment paper, making sure they don’t overlap.

Bake for 20-25 minutes, or until the edges are crispy and golden. Flip the rounds halfway through the baking time to ensure they cook evenly.

Once done, remove from the oven and let them cool slightly. They will continue to crisp up as they cool.

Enjoy your pickle baked potato rounds as a tasty snack or side dish. For an added touch, serve with a dipping sauce like a garlic aioli or ranch dressing.
