1 (10 ounces) bag baby spinach leaves
4 large eggs hard-cooked eggs, peeled and sliced
1 cup sliced mushrooms
4-piece (blank)s strips crisply cooked bacon, crumbled
10 ounces Swiss cheese, shredded
½ cup toasted sliced almonds

1 tablespoon olive oil
1 large shallot, minced
1 teaspoon garlic, minced
⅓ cup white wine vinegar
⅓ cup Dijon mustard
⅓ cup honey or 2 tablespoons sugar
2-piece (blank)s strips crisply cooked bacon, crumbled
salt and pepper to taste

Directions:
In a large serving bowl, add in the spinach. Place the hard-boiled eggs, 4-strips of crumbled bacon, Swiss cheese, almonds, and mushrooms on top.

Place a small skillet on the stove and turn the heat to medium.
Add in the olive oil and allow it to become hot.

Add in the garlic and shallots. Cook for 2 minutes or until the garlic is aromatic, and shallots are translucent.
Add in the Dijon mustard, honey, 2-strips of crumbled bacon, and vinegar. Whisk until well mixed and season with salt and pepper to taste.

Pour in the dressing into the spinach and coat evenly
