3 tablespoons olive oil
2 large spanish onions, finely diced
1 teaspoon kosher salt
20-24 oz cremini (baby bella) mushrooms, finely diced
2 cloves garlic, minced
2 teaspoons red wine vinegar
1 teaspoon soy sauce
2 tablespoons brown sugar
1 cup mayonnaise

Directions:
Directions:
Heat oil in a large, deep frying pan over low heat.
Add onions and salt. Cook, stirring occasionally, for about 15-20 minutes, until onions are starting to get some color.
Add mushrooms, garlic, vinegar, soy sauce and brown sugar, stir to combine.
Raise heat to medium-low and cook for an additional 30-40 minutes, stirring occasionally, until the color has deepened.
Set aside to cool completely.

Mix cooled onion and mushroom mixture with mayonnaise.
Store in fridge until ready to serve.

Plan ahead:
You can freeze the onion and mushroom mixture and defrost and mix with mayonnaise when ready to serve
