1# angel hair pasta
2 T. olive oil
1 # large shrimp, peeled and deveined
4 cloves garlic, minced
1/2 t. red pepper (optional)
1 lemon, juiced
1/2 c. dry white wine
4 T. butter
1/2 lemon, zested
1/4 c. parsley leaves, chopped
salt, to taste
pepper to taste

1. In a large pot of boiling salted water, cook pasta until al dente according to he package instructions. Drain and reserve a ladelful of the pasta water.
2. While the pasta cooks, heat a 12 inch skillet over medium-high heat.
3. Add the oil to the warm skillet and heat until simmering and hot.
4. Add shrimp to the oil and saute until cooked to the pink stage.
5. Place the shrimp in a bowl and set aside.
6. Add the garlic and red pepper flakes to the same skillet, saute until the garlic is fragrant, about 1 minute.
7. Add the lemon juice and wine to the garlic and let this mixture reduce about 2-3 minutes)
8 .Whisk butter into the wine mixture and add the reserved paste water and cooked shrimp.
9. Add the pasta, parsley and lemon zest and mix well.
10 Season with salt and water
