2 T butter…
4 cups frozen corn…
1/4 cup mayonnaise…
1/4 cup sour cream…
Juice of 1 lime…
1 t ground cumin…
1/2 t chili powder…
1/2 cup of cotijo cheese…
1/4 cup cilantro…

Directions:
Directions:
Melt butter in pan…
Stir in frozen corn…
Cook 5 minutes, stirring every minute…
Stir in mayonnaise and sour cream, mix it well…
Now stir in lime juice, cumin, and chili powder, mix it well…
Add 1/2 of the cotijo cheese, stir until it is melted…
Sprinkle rest of cheese on top of corn mixture…
Sprinkle in the cilantro…
Serve out of pan or after the cheese melts, put in a dish and do the last 2 steps in the dish…
ENJOY!
