4 large chicken breasts
1 cup pineapple juice or chicken stock or veggie and chicken stock - see notes
1 Tbsp minced garlic opt.
2 tsp salt or 1 tsp if using stock and sometimes I don't use any because I forget and it still tastes good.

Place all ingredients in instant pot and dust chicken with Brazilian seasoning. Close lid and turn vent to sealed.
For frozen chicken cook on high pressure for 10-12 minutes. For fresh chicken, cook on high for 4 minutes. Allow to release naturally for 5 or so minutes, then do a quick release if needed. The recipe says to remove chicken and let sit for 5-10 minutes. I don't bother with this part. I like to take it out and either serve it, or pull it apart immediately. May use cooking liquid for serving chicken. Chicken can come out at 162 degrees as it will reach 165 while resting.
You can add veggies in with the chicken also. I've done regular and sweet potatoes... they turn out delicious!

I usually make the broth with a tsp each of vegetable and chicken bouillon for extra flavor. If I'm serving rice made with coconut milk, I like to use the pineapple juice with some pineapple for cooking the chicken, or a mix of juices for a more citrusy flavor. You can use lemon pepper to season the chicken, or use your imagination!
