Ingredients: 2 tablespoons soy sauce Juice of one fresh lime (about 2 tablespoons) 2 tablespoons vegetable oil, divided 3 cloves of garlic, minced 2 teaspoons of chili powder 1 teaspoon ground cumin 1 teaspoon dried oregano 1 1/2 pounds flank steak 2 red bell pepper, seeded and cut into strips 1 large red onion, sliced
12 flour tortillas 1 alvocado, sliced 1/2 cup queso fresco, crumbled Salsa Limes

Directions:1. In a medium bowl, combine soy sauce, lime juice, 1 tablespoon oil, garlic, chili powder, cumin, and oregano. 2. Place flank steak in a gallon size Ziplock bag and add marinade. Marinate for at least an hour turning the bag occasionally. 3. When ready to cook, preheat the grill to high heat. Use one tablespoon of oil on the grill rack. Cook the steak on the grill until its internal temperature is 145 degrees. Remove from grill and let rest on the cutting board covered with foil for ten minutes. While steak is resting, grill the peppers and onions in a grill basket. 4. Cut the steak across the grain into strips. Place steak strips in the grilled tortillas and add your favorite toppings. Squeeze a little lime on top! |

Notes: So good! Flank steak is relatively lean and cooks up tender. It's not too pricey, either!
