4 Egg Whites (at room temperature)
1 Cup Sugar or Sugar Free Substitute
1 Teaspoon Baking Powder
1/4 Teaspoon Vanilla Extract
2 Cups Saltine Crackers (coarsely broken)
3/4 Cup Pecans, Chopped
1 1/2 - 2 Cups Whipped Cream or Substitute
1/4 Cup Pecans, Chopped

Directions:
Directions:
Whip egg whites on medium speed until soft peaks form. Continue whipping on medium speed while gradually adding sugar and baking powder. Continue to whip until very stiff peaks form and all sugar is dissolved. Add vanilla and mix thoroughly.

Add saltine crackers and pecans; gently fold in by hand. Pour into a greased 9" pie pan and bake at 300 degrees for 30 minutes until center is almost firm.

Remove from oven and cool upside down. When thoroughly cooked, top with whipped cream and sprinkle with chopped pecans.

I found this recipe when I was going through some old recipes. The cafeteria is closed now It's a great recipe! I added the sugar free substitute sugar
