150g medium coarse oatmeal
2 Tblsp. sunflower seeds
2 Tblsp. pumpkin seeds
2 Tblsp. sesame seeds
2 Tblsp. chia seeds
2 Tblsp. flaxseeds
a pinch of salt
1/4 tsp. baking soda
210 ml boiling water

Directions:
Directions:
Preheat the oven to 200 F.
Add all dry ingredients and stir in a bowl. Add hot water and stir well. Let stand for 5 minutes. This allows water to absorb. Take a piece of parchment paper and flatten the dough onto it. Cover it with another piece of parchment paper and roll flat. Cut the oatcakes using a biscuit cutter or a knife (Should make about 20-24). Place on parchment lined cookie sheet. Bake at 30 minutes or until golden.
Store in airtight container up to 5 days.
