4 grapefruit with good thick skin
5 cups sugar

Cut the peel from the grapefruit. First cut the bottom and the top, then cut the skin in thick downward slices.The skin should include all the white pith. Place the skin on a cutting board pulp side down and slice into 1/4 inch strips. Put the peel into a saucepan covered with cold water. Bring the water to a boil, then remove from heat and drain in a colander. Rinse quickly in cold water. Put the skins back into the saucepan. Cover with cold water and bring to a boil. Drain. Rinse. Repeat this process 5 times in total. Finally, put the peel back into the saucepan and add the sugar. Stir gently and then leave to simmer at a very low temperature Stir occasionally to prevent sticking, but do not disturb too much. When the fruit is dry, and all the liquid is gone, remove from the stove. With tongs, remove the peel strips one by one to a cake rack and allow to cool. This is best done overnight. To serve, toss with white sugar. Should be crisp and glazed on the outside and soft inside.

Mom used to make candied peel every Christmas - making them red and green (I guess she would use two different syrups - one with green food coloring and the other with red coloring. So good with a hot cup of coffee.
