Crepe:
4 eggs
1 cup flour
1 cup water

Potato Mixture:
See Mashed potatoes recipe

Mushroom Sauce:
Oil, for sautéing
Onions
Can of mushrooms
Water
Onion soup mix

Directions:
Directions:
Crepe:
Mix ingredients together by hand (fork, whisk or hand mixer).
Spray frying pan with Pam and pour layer of mixture into pan.
Fry till cooked and flip over. fry another minute.

Put in mashed potatoes and fold neatly.
You can use a cornstarch and water mixture to seal the blintzes.
Or an egg wash (1 egg diluted with water).

Mushroom Sauce:
Dice up onion and sauté in oil.
Add in a can of mushrooms and a little water.
Add in some onion soup mix.
Keep on a low flame for a half hour, stirring occasionally.
