2 lbs. ground beef
¼ onion, chopped
½ (1.25 oz) pkg. spicy chili seasoning mix
1 (15 oz.) can ranch-style beans
1 (10 oz.) can diced tomatoes with green chile peppers
1 (14.5 oz.) can diced tomatoes
2 c. self-rising flour
1 c. buttermilk
2 c. vegetable oil (for frying)

Directions:
1 – Preheat the oven to 200 degrees.
2 – Cook and stir the ground beef and onion in a large skillet over medium heat until beef is brown and crumbly, about 10 minutes; drain excess grease.
3 – Stir in chili seasoning mix, beans, tomatoes. Bring to a boil, reduce heat to low, and simmer until mixture is thick about 10 minutes; let simmer while you finish the remaining steps.
4 – Mix flour with buttermilk in a bowl (dough will be sticky). Scoop up about ¼ cup of dough and gently pat into a 5-inch circle on a well-floured work surface, repeat with remaining dough.
5 – Heat oil in a heavy skillet to 400 degrees.
6 – Fry dough circle in hot oil until golden brown, about 3 minutes per side. Fry bread will expand in size as it cooks. Drain on paper towels and place on a baking sheet. Transfer to the oven to keep warm while you fry the remaining dough pieces.
7 – Top fried bread with ground beef mixture and serve.
