1/4 C soy sauce
1/4 C sugar
2 Tbsp mirin
2 Tbsp toasted sesame oil (we go light with this)
3 cloves garlic, minced or grated
Salt/Pepper
1 large zucchini, halved lengthwise and cut on the bias into 1/2 inch pieces
1 lb thinly sliced steak
Toasted sesame seeds or white rice for serving

1. Pre-heat air fryer to 400*
2. Whisk soy sauce, sugar, mirin, sesame oil, garlic, 1/2 tsp pepper and 2 Tbs water together in a large bowl until most of the sugar is dissolved and the marinade is homogenous. Set aside 1 Tbsp of the marinade in a medium bowl, add the zucchini and 1/4 tsp salt and toss well until coated. Add beef to remaining marinade and toss until beef is well coated.
3. Transfer beef to air fryer basket and air fry until browned/cooked through (10 minutes). Carefully transfer beef to serving plate - do not clean the basket. Transfer the marinated zucchini to the basket and air fry until zucchini is browned on top/cooked through (5-6 minutes).
4. While zucchini is cooking, tear beef into bite-sized pieces. Transfer zucchini to the same place as beef, and pour residual marinade from bottom of air fryer over the beef. Sprinkle with sesame seeds, and serve with white rice.
