Ingredients: 3 green onions ⅓ cup rice vinegar 3 Tbsp reduced-sodium soy sauce 1 Tbsp. toasted sesame oil 1 Tbsp. finely chopped fresh ginger 1 tsp. toasted sesame seeds ½ tsp. crushed red pepper 1 Ib. boneless beef sirloin steak, cut 1 inch thick and trimmed 4 oz. dried soba (buckwheat) noodles, cooked according to pkg. directions

Directions: Thinly slice green onions, separating white and green parts. For marinade, in a medium bowl combine white parts of onions, vinegar, soy sauce, oil, ginger, sesame seeds, and crushed red pepper. Transfer half of the marinade to a small bowl.
Slice meat across the grain thin strips. Add meat to marinade in medium bowl; toss to coat. Cover and marinate in refrigerator 1 to 4 hours. Drain meat, discarding any marinade. Thread meat onto eight 8-inch Skewers.
Grill meat skewers, uncovered, over medium 3 to 5 minutes or until meat slightly pink in center, turning once.
Meanwhile, toss cooked soba noodles with the reserved marinade and green parts of onions. Serve meat skewers with noodles and, if desire top with additional green onion tops.
