2 chicken breasts
2˝ tablespoons Frank's hot sauce, divided
2 tablespoons brown sugar, divided
1 teaspoon olive oil, plus additional as needed
1 tablespoon honey
1 package puff pastry dough, defrosted

Hot Sauce:
˝ cup mayonnaise
4-6 tablespoons Frank's hot sauce, adjust to your prefernace
2 tablespoons soy sauce
1 teaspoon fresh lime juice

Directions:
Directions:
1. In a gallon sized Ziploc bag, combine 1 tablespoon hot sauce and 1 tablespoon brown sugar. Add chicken and toss to coat, marinate overnight.
2. Preheat oven to 350.
3. Heat olive oil in a large skillet over medium heat. Add chicken and sauté, stirring occasionally, until fully cooked.
4. Add honey, remaining 1˝ tablespoons hot sauce and 1 tablespoon brown sugar. Simmer for another 3-4 minutes.
5. Fill pastry dough with chicken and seal in empanada shape. Brush with oil and bake until golden.
6. Mix all hot sauce ingredients together.
7. Serve with hot sauce

Note:
To prepare ahead, make empanadas but do not bake until you are ready to use.
Place them in a pan and cover well. Freeze. When ready to use, remove from freezer, place on baking sheet and brush with a thin layer of egg and bake until golden.
