1 box spring mix
1 can sweet corn roasted
Handful cherry tomatoes, halved
1 small red onion, thinly sliced
Candied pecans chopped
1 (6oz) package pastrami, thinly sliced

Dressing:
¼ cup Dijon mustard
¼ cup oil
3 tablespoons maple syrup or honey
3 tablespoons vinegar
salt, to taste
pepper, to taste

Directions:
Directions:
Drain the can of corn and place in a frying pan with 1 tablespoon of oil.
Cover loosely with foil.
Let it sit on high heat until golden.

Shake up dressing ingredients in a container.
Put all salad ingredients in a bowl. Pour desired amount of dressing on top.
Toss and enjoy.
