5lb bag Yukon gold potatoes
1 zucchini (optional- makes the kugel very moist)
1 small onion
¾ cup oil
6 eggs
1 tablespoons salt
1 teaspoon pepper

Directions:
Directions:
Preheat oven to 500.
Peel potatoes and zucchini.
Using the S blade in your food processor, blend the oil, onion, salt and pepper. Add eggs and pulse a few times.
Pour mixture into 9x13 pan and switch to shredder blade (stringy one).
Shred potatoes and zucchini then add to egg mixture in pan.
Bake on 500 for 1 hour then lower to 350 and bake another half hour.
