PEACH MIXTURE
8 medium sliced peaches
4 tbsp. light or dark brown sugar
1 tsp. vanilla or almond extract
4 tsp. cornstarch
¼ tsp. cinnamon
½ tsp. nutmeg
½ tsp. salt
1 tsp. lemon juice

TOPPING
1½ cups all purpose flour
1 cup sugar
½ tsp. salt
1½ cups cooled melted unsalted butter

1. Preheat oven to 350º
2. Mix peach ingredients, except peaches in 2 qt. sauce pan. Gradually add peaches and stir constantly until sauce thickens. Boil one minute. Pour into untreated 8x8 baking dish.
3. Mix sugar, flour and salt in mixing bowl. Add melted butter and mix to form a crumbly dough.The topping will be quite sandy and crumbly, but should hold together when you pinch it. If not, add a bit more flour.
4. Pat handfuls of the dough into thick palm sized disks about a ¼ to ½ inch thick.
5. Lay disks over peach mixture and overlap to make a cobblestone look.
6. Bake for 45 to 55 minutes on a baking sheet. Serve warm with vanilla ice cream.
