Skirt Steak
2 tablespoons teriyaki sauce

Spring mix
Diced sweet potatoes
Mini peppers
Red onions thinly sliced
Persian cucumbers sliced
Sesame seeds
Scallions

Dressing:
2 ½ tablespoons oil
1 teaspoon soy sauce
1 teaspoon mustard
1 tablespoon maple syrup
1 teaspoon vinegar
1 tablespoon water
Ground pepper to taste

Directions:
Directions:
1.Soak skirt steak in a bowl of cold water for 30 minutes. Remove and pat dry.
Pour teriyaki sauce over meat and massage in.
Let marinate for a half hour or up to overnight..
Cut into pieces and sear on high heat, 1 minute per a side.
2. Put sweet potatoes on a cookie sheet, drizzle oil over it and bake on 400 for about 40 minutes, until soft. Mix it around after 20 minutes.
Spread mini peppers on cookie sheet, drizzle oil and bake on 400 for 15-20 minutes.
3. Mix dressing ingredients together. Toss over salad.
