1 lb chicken cutlets

Marinade:
3 teaspoon brown sugar
1½ teaspoon kosher salt
4 cubes frozen garlic or 4 fresh cloves minced
5 teaspoons red wine (dry or sweet)
2 teaspoons corn starch
6 Tablespoons oil
1 ½ teaspoons soy sauce

Sauce:
½ cup apricot jam
3 teaspoons yellow mustard
2 teaspoons soy sauce
Mix and keep at room temperature for dipping

Directions:

Marinade small cubes of chicken cutlets for at least 3-4 hours or longer.
1 cube for each piece of dough.

Mix the marinade ingredients together.

Spread out the wonton wrappers and place 1 cube of chicken on each. Use the marinade as 'glue' along the edges, fold over and press down to seal.

Fry in hot oil on both sides. Drain on paper towels.

This freezes well.
Defrost and warm up single file on low temperature uncovered, till crispy.

Serve with dipping sauce.
