¼lb button or brown mushrooms, sliced
1 pint grape tomatoes
1lb sugar snap peas
3 tablespoons extra virgin olive oil
2 cloves garlic crushed
1½ teaspoons kosher salt
¼ teaspoon ground black pepper

Pesto Dressing:
½ cup fresh basil leaves
½ cup pine nuts
½ cup extra virgin olive oil

Directions:
Directions:
1. In the bottom of a wok or deep frying pan, heat olive oil at medium high heat.
Add crushed garlic and sauté for about 1minute, until garlic starts to get very fragrant. Add mushrooms and sauté until they begin to soften.

2. Add tomatoes and sugar snap peas and mix constantly. Sprinkle with salt and pepper. Cook snap peas for about 2-3 minutes. They should turn a bright shade of green and retain their crispiness. Remove from flame.

3. Combine pesto dressing ingredients in food processor. Process until smooth.

4. Add pesto dressing after removing from flame, toss to coat.
