4 medium garden-fresh tomatoes
3/4 cup mayo
1 sleeve saltine crackers, coarsely broken
salt
pepper


**You can also use Ritz, add chopped eggs, avocado, bacon, ranch dressing, etc.

Directions:
Directions:
Seed and coarsely chop the tomatoes. In a medium bowl, combine the tomatoes and and mayonnaise. Add the broken crackers and toss lightly to coat. Add salt and generous amounts of black pepper to taste. Serve immediately.

One of my greatest memories with my grandmother Caroline, was the big fatty tomatoes she sliced up as a side and put on my dinner plate. We would drive to the local fruit and vegetable stands around Tryon almost daily. Corn and peaches were also items we would pick up.

Tomato sandwiches were very popular in the South, especially when mothers had to stretch their food budget.

This recipe is from a Southern cooking show, and it immediately reminded me of those tomatoes!
