1 medium zucchini
1 medium summer squash
1 medium red bell pepper
1 medium yellow pepper
1 pound fresh asparagus
1 red onion, chopped
3 T extra-virgin olive oil
1 t salt
½ t freshly ground black pepper

Directions:
Directions:
Preheat over to 400º

Cut zucchini, squash, peppers, and asparagus into bit-sized pieces. Place vegetables and onion in a large roasting pan. Toss with olive oil, salt and pepper. Mix to coat. Spread in a single layer in the pan. Roast for 20 minutes, stirring occasionally, until the vegetables are lightly browed and tender.
