Ingredients:  
1 pound chicken, cut up into small chunks
1 C chopped onion
1 can chicken broth
2 cloves of garlic, chopped finely (1 T)
½ t dried oregano leaves
2 - 15 oz cans white beans (great northern or cannellini)drained and rinsed
½ C chopped red, green or yellow bell peppers (or combination)
Jalapeño chili peppers optional or "to taste" (depending on how much heat you like)

In a 4 to 6 quart crock pot, combine the chicken, onions, chicken broth, garlic, cumin and oregano. Let cook approx. 3-5 hours. Add drained beans. Add the bell peppers and jalapeño peppers (if using) no earlier than the last hour and a half before serving.
