Fingerling potatoes washed and sliced in half
(or regular potatoes washed and sliced)
1 heaping cup mayonnaise
3 tablespoons mustard
1 teaspoon salt
1 teaspoon garlic powder
1 heaping tablespoon of paprika

Directions:
Directions:
Put all the marinade ingredients into a large Ziploc bag.
Shake up until well mixed.
Add the fingerling halves to the bag and shake up till coated.

Preheat oven to 425.
Line a large pan (not cookie sheet) with parchment paper.
Put the potatoes in skin side up. Single file.
Cover the pan and bake for 1 hour and 10 minutes.
Uncover and bake another 10-20 minutes. keep an eye on it.
You may want to sprinkle some more salt on top when its done.
