50 gm garbanzo flour
1 TB oil plus extra for pan frying
½ inch fresh ginger, peeled and grated
2 garlic cloves, grated
150 gm frozen green peas
1 green chili, finely chopped
150 gm fresh spinach, finely chopped
2 medium potatoes, boiled and roughly mashed
½ tsp salt (use less)
1 tsp chaat masala spice mix
½ tsp chili powder
60 gm roasted peanuts

In a dry pan, toast the flour over a low heat for 5 minutes, until fragrant and beginning to change color. Tip into a small bowl.

Heat the oil in the same pan, add ginger and garlic and cook for 1 minute. Add the peas and green chili and cook for 2 minutes more until softened.

Add the spinach and cook, stirring on a high head for 3-4 minutes until spinach has wilted and there is no liquid left in the pan. Add the mashed potatoes, salt and spices and mix well. Tranfer mixture to a bowl.

Coarsly crush the peanuts with a mortar and pestle and add them to the bowl along with the toasted flour. Mix well.

Take large spoonfuls of the mixture and shape into small round cutlets (tikkis). Heat 1-2 TB of oil in a frying pan and cook the tikkis over medium heat for 2-3 minutes on each side until golden.

Serve with chutney of your choice - tomato works well.
