2 lbs. red skin potatoes
1 lb. bacon
1/2 c. mayo
1/4 c. Caesar dressing
1/4 c. Ranch dressing
3 T. sour cream
1 T. Dijon mustard
2 T. apple cider vinegar
8 oz. shredded or cubed cheddar cheese
3 diced scallions
Salt and pepper to taste

Directions:
Directions:
Cube potatoes with the skin on. Put in a pot of cold water, bring to a boil, turn down to simmer and cook until potatoes are tender, approximately 10 to15 minutes.

Let Cool. Mix ingredients in separate bowl, add to cooled potatoes. Top with extra scallions
