2-3 lbs. of stew meat cut into bite size pieces.
( I sometimes buy london broil if its a good price)

1/2 C flour

1 tbsp seasoned salt

salt & pepper

2 Bay leaves

2 tbls tomato paste

3 cups of cut up vegetables of your choice
-carrots, celery, onions, potatoes, zucchini, peas, green beans

1-2 medium potatoes cut to bite size pieces (can leave the skin on)

1/4 C canola oil

1 C Red wine

1 C water with 1-2 beef Boullion packets or cubes dissolved.

3 Cups beef stock or broth

-season flour with salt , pepper & seasoned salt

-toss beef in flour to coat , shake off excess and set aside

-heat oil in large pot

-cook beef pieces to brown quickly on all sides, a few batches at a time, don't over crowd the pot.

-remove beef form pot & set aside

-add red wine to pot and cook on med/ high heat & scrape bottom of pot for browned bits

-add tomato paste and stir until combined

- add broth, bay leaves & beef

-add water & bouillon

-stir & bring to a boil then reduce heat to a slow simmer

-cover and cook until beef is tender , approx. 2 hours

-add vegetables and cook until tender approx. 45 min. more

-add more broth or water if needed

-season with salt & pepper if needed

When meat & veggies are fork tender , you are good to go !!

Serve with Kyles homemade bread or biscuits!

**** The cooking times are approx. , the longer the better .

***** This recipe can be made in a crock pot , I just add all ingredients at once and then cook on low for 6-8 hours or High for 4-5 hours .

I do just coat the meat in the flour mixture and toss it in the crock pot , no browning needed. The flour acts as a thickener.

****put this together on a Fall or Winter morning and come home to goodness !!!!
