Directions:Put 1 c of frying oil in a large fry pan **(depends on the size of the pan ,you want at least an inch of oil ...) add a drizzle of olive oil to the frying oil ( gives extra flavor)
****don't turn on oil until your chicken is breaded and ready to go *****
Mix bread crumbs & parm cheese together in low dish
Put egg mixture next to bread crumbs and a dish to the side to hold breaded chicken before cooking.
If chicken breasts are thick , slice them vertically to make 2 cutlets -need to tenderize the chicken by putting each slice in between plastic wrap or waxed paper and pound them until 1/2" thick
-once all chicken is pounded thin
-dredge chicken in egg mixture then in bread crumbs , pat bread crumbs into chicken
-Put breaded pieces to the side in another dish (i like to get all chicken breaded before any frying goes on ) -This will give you time to clean up the area
Heat oil to 350º Med high heat ( you will know if the oil is ready when you drop a pinch of bread crumbs and they sizzle right away )
Put chicken cutlets 3 at a time in the hot oil -cook approx. 3 min. per side -drain on paper towels then put aside , change the paper towels as needed
***I typically am able to get side dishes ready and table set as well as clean up before I am ready to put the chicken in the oil. once chicken is breaded and sitting to the side , the mess and hard work is done.... then you can just fry the chicken, sit & down to eat ! Let the oil cool and then store it for another use or dispose of it in a container or ziploc bag... never let it go down the sink drain !! |

Notes: This is your dads favorite dish although he does prefer breaded pork chops but this is my go to recipe to make for him along with buttered egg noodles ,good seasons italian dressing (he puts that on the chicken , its really good) , green beans and of course apple sauce !! You girls always loved it too !
The secret to the flavor is the olive oil added to the frying oil and the parm cheese with the different mixed kinds of bread crumbs.
**** this is same way I bread & cook the eggplant for the eggplant parm !
****almost all breading / frying of chicken cutlet recipes involve dredging the chicken in flour then egg then bread crumbs so the breading does not separate from the chicken .... I have never had that issue with the way I do it so I'm sticking to my recipe .....
