2 stalks celery minced
1 onion minced
⅓ cup butter
2 cups of clam nectar
6 slices bacon
⅓ cup flour
4-5 cups diced potatoes (red or gold are best)
2 cups corn niblets
4 cups 10% cream
6 cups or more of seafood, combination of shrimp, clams, scallops, crab etc.
6 oz of fish, (halibut, cod)

1 tsp thyme
2 bay leaves
2 tsp parsley
½ cup white wine (if available)

Directions:
Directions:
Drain clam juice from clams into pot and add clam nectar. Add diced potatoes, some salt and cook until tender. Dice bacon and fry until crisp. Melt a little butter and fry fish and then flake it up. Prepare seafood as needed. Set seafood, bacon and fish aside. Melt the ⅓ cup butter, and saute onion and celery until tender. Add flour and mix until it bubbles. Add clam juice from cooked potatoes and stir until thick. Add cream and heat until thickens. Add cooked potatoes, corn and seafood, and spices. Salt and pepper as desired. Simmer gently without boiling for a bit then I like to let it sit and cool some to let tastes meld together. Can be jarred and sealed for the fridge or frozen.
