Ingredients: Cake: 2 c. flour 3/4 c. cocoa powder 1 t. baking soda 1 t. salt 1 1/2 c. sugar 1/3 c. unsweetened apple sauce (1 individual snack size) 1/3 c. canola oil 1 1/2 T. pure vanilla extract 1 1/2 c. water
Frosting: 3 3/4 c. sifted powdered sugar 4 T. cocoa powder 3 T. vegan butter (Earth Balance) 5 T. plant milk 1 t. pure vanilla extract

Directions:Preheat oven to 350º and grease a 9x13 pan. In a large bowl combine all dry ingredients then make a well and add all the wet ingredients. Stir until just combined (don't over mix). Pour into greased pan. Bake on center rack for 25 mins. or until batter has risen and when a toothpick inserted in center of cake comes out mostly clean (maybe a few crumbs sticking to toothpick, not wet batter) Cake is delicious baking and frosting it the day/night before needing it.
Frosting: Combine ingredients and beat until creamy. Frost the cake when it has cooled completely. |
