1/2 c. chopped walnuts
1/3 c. packed brown sugar
1 c. coconut
2 1/2 c. flour
1 1/2 c. sugar
1 1/2 t. baking soda
1 t. salt
1/2 t. baking powder
1/4 t. ground cinnamon
2 eggs
1/2 c. evaporated milk
1/3 c. water
2 c. shredded peeled apples



CARMEL TOPPING:

1/3 c. packed brown sugar
1/4 c. evaporated milk
2 T. butter or margarine

Directions:
Directions:
Combine walnuts, brown sugar and coconut; set aside. In a mixing bowl, combine the next six ingredients. In a small bowl, combine eggs, milk, water and apples; add to flour mixture. Mix well. Pour into a greased 13x9x2 baking pan. Sprinkle with nut mixture. Bake at 325 for 45-50 minutes or until toothpick inserted near center comes out clean. Meanwhile, in a heavy saucepan, combine the topping ingredients; cook over medium heat, stirring constantly, until the sugar is dissolved and the mixture has thickened slightly, about 8 minutes. Poke holes with a fork on top the hot cake; immediately spoon topping over cake.Cool on a wire rack.Serves 12- 15.
