1 Granny smith apple
1/2 lemon
1/2 C Chopped walnuts
purple onion slices
shaved parm cheese
2 bags mixed greens
(romaine, radicchio, red leaf , butter lettuce )
** can be made with just romaine **

Put everything out and ready to go

Mix the vinaigrette (small mason jars work great for this , can be made ahead)

1/3 C olive oil
1/4 apple cider vinegar (I like a lot of vinegar, choose the amount to your taste)
salt & pepper to taste
3 Tblsp Honey
2 Tblsp Dijon mustard
Shake it up !

-Lightly toast the walnuts in a pan ( med/low heat ) watch them closely , they burn easily . Just looking to warm them and release the flavor. Put aside

-Peel apple and cut into thin slices , then cut into bite size pieces
toss with the squeeze of half lemon (keeps the apples from browning)

-wash and cut lettuce into bite size pieces & put in a large bowl

-add onion slices and toss

-Toss walnuts , apples and vinaigrette just begore serving

Top with the parmesan cheese slices
(just use a carrot peeler on the chunk of cheese)
