1 lb. protein (ground meats work best)
1 pkg. taco seasoning
10 - 12-inch tortillas
Sriracha sauce
2 cans black beans, drained and rinsed
2 cans diced tomatoes
1 can hatch green chiles
1 lb. Mexican cheese, shredded
2 cans enchilada sauce (red, hot or mild)

Directions:
In a large skillet, cook ground meat until fully cooked. Drain. Add taco seasoning and water, according to package directions. Stir mixture and bring to a boil. Simmer for 5 minutes or until most of the water is absorbed. Spread some enchilada sauce and shredded cheese in the bottom of lightly greased 9 x 13 pan. Squirt 1 or 2 seconds of sriracha sauce on half of each tortilla. Spoon a portion of seasoned meat mixture on hot sauce. Add a portion of the next 5 ingredients to each tortilla. Repeat for all 10 tortillas. Fold top of enchilada over the meat, fold sides of enchilada in and roll over to secure. Place enchiladas in pan. Spread any remaining beans, tomatoes and green chiles over the top of the enchiladas. Pour remaining enchilada sauce over all and sprinkle with remaining cheese. Bake, uncovered, at 400º for 20 minutes. If crispy top is desired, broil for an additional 5 minutes.
