LEMON PEPPER MARINADE
juice of 1 lemon
1 TBSP olive oil
1 TBSP slat
1/2 TBSP PEPPER
1 tsp garlic powder

3 (24 oz) chicken breasts, POUNDED EVEN and PUT IN MARINADE AND MAKE CREAM SAUCE

(in magic bullet processor)
180g fat free evaporated milk
80g parm/reggiano cheese SHREDDED
ground pepper to taste
juice of 1/2 lemon

RICE
320g Basamati rice, RINSED
480g water
30g butter

Bring to a boil, COVER, REDUCE HEAT TO LOW, SIMMER 15 MINUTES.
REMOVE FROM HEAT...SIT COVERED 10 MINUTES

Directions:
PLACE chicken in pan and cook, DRIZZLE with some marinade.

SQUEEZE 1/2 lemon in pan, stir/deglaze.
REDUCE to low.
POUR in milk mixture, ADD some ground pepper.
Pull cream with spatula, should create a clear space on pan, then pour into measuring cup for ease of pouring.

PLACE rice in pan, lay chicken on top, and pour glaze over all.
