1 lb shrimp, peeled and deveined
1 yellow onion, chopped
1 can (14.5 oz) diced tomatoes
1 tablespoon tomato paste
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/4 cup fresh oregano, chopped
1/2 cup crumbled feta cheese
Salt and pepper, to taste
Olive oil, for cooking

Heat some olive oil in a large skillet over medium-high heat. Add the chopped onion and sauté until softened and translucent, about 5 minutes.

Add the minced garlic and cook for an additional minute, until fragrant.

Stir in the diced tomatoes and tomato paste, and bring the mixture to a simmer.

Add the shrimp to the skillet and cook until they turn pink, stirring occasionally, about 5-7 minutes.

Season the shrimp and tomato mixture with salt and pepper to taste.

Sprinkle the chopped parsley and oregano over the top of the mixture, and then sprinkle the crumbled feta cheese on top.

Cover the skillet and cook for an additional 2-3 minutes, until the cheese is slightly melted.

Serve hot, with crusty bread or over a bed of rice.
