1 can refried beans,
1can black beans,
16 oz. sour cream,
1 package taco seasoning,
1 small tomato chopped,
16 oz package shreaded cheese (cheddar or mexican blend)
1 shallow baking dish (I use a round corningware dish that is about 10 in. in diameter and about an inch high.)

Drain black beans. In a medium mixing bowl combine black and refried beans. Spread the bean mixture in the bottom of your baking dish.

In a medium mixing bowl combine the taco seasoning and sour cream. The sour cream will turn orange. Make sure it is well blended and there are no clumps of seasoning. Spread this on top of the beans in the baking dish to make a second layer.

Sprinkle the chopped tomatoes on top of the sour cream.

Top with shreaded cheese and bake uncovered at 350º for 15-20 min. or unitl cheese is melted and golden.

Serve warm with tortilla chips.

This has become my signature dish. It was created a couple of years ago at 4th of July in an attempt to use up leftover beans. Now, Jonathan thinks this is a main dish and will make it for dinner.
