1 qt chicken stock
2 cups arborio rice (may use Jasmine or Basmati)
1 tsp onion powder
1 tsp garlic powder
2 tsp Italian seasoning
2 tsp salt
½ tsp cracked pepper
2 Tbsp tomato paste
4 boneless skinless chicken breast cut up
¼ cup shredded mozzarella
¾ cup romano cheese

Directions:

Coat instant pot with cooking spray. Add rice, liquids and spices. Put chicken and tomato paste on top.
Cook: High pressure for 6 minutes, quick release.
Add cheeses and serve
