1 tbsp. oil
1 onion, sliced
1 tbsp. fresh ginger, grated
4 cloves garlic
1 tbsp. chili garlic sauce (e.g. sriracha)
1 tbsp. fish sauce
½ cup soy sauce
¼ cup rice vinegar
4 oz. shiitake mushrooms, stems removed and sliced
½ - ¾lb baby book choi, sliced lengthwise in quarters
4 cups chicken broth
1 cup water
2 packages fresh yakisoba noodles

Ramen egg:
4 eggs
½ cup soy sauce
¼ cup rice vinegar
¼ cup Mirin
½ cup water

Additional toppings:
Sliced gree onion
Sesame seeds
Lime wedges

Ramen egg:
Bring pot of water to boil. Carefully lower eggs into pot and boil 7 minutes. Immediately transfer to ice bath once 7 minutes is up.

Peel the eggs. Combine egg marinade then place eggs in mixture - make sure they are completely submerged. Marinate at least 24 hours, or up to 2 days. Cut in half and add to soup.
