1 (16 oz) bag split peas
3 qts water
1 small ham shank
1 Lg onion, finely chopped
2 pkg Goya ham concentrate
1/2 tsp garlic powder
1/2 tsp oregano
1/4 to 1/2 tsp pepper
1 bay leaf
1 1/2 cups thinly sliced carrots
1 cup chopped celery
1 medium diced potato

Directions:
Directions:
Combine all ingredients in a 5 qt or larger soup pot. Simmer uncovered for 1 1/2 hours.

Remove the bone and trim off the ham dice and return ham to pot. Continue simmering for 2 to 2 1/2 hours.
Remove bay leaf and serve. (I add about 1/2 tsp ground bay leaf, because I think the flavor cooks out over the extended cooking time)
