1/2 c oat flour
1/2 c all-purpose flour
1 1/2 tbsp coconut sugar
1 1/2 tsp baking powder
1/2 tsp salt
1 egg
3/4 c almond milk
1 tsp vanilla extract
1 1/2 tbsp coconut oil (melted)

Directions:
Directions:
Whisk together both flours, baking powder, sugar, and salt in a medium sized bowl. Whisk together egg, almond milk, vanilla, and coconut oil in a separate bowl.
Fold wet ingredients into dry ingredients and let sit for at least 5 minutes before frying.
Fry pancakes on well-greased pan over medium-high heat until bubbles form all over surface and then on second side once they bounce back when gently pressed on top.
Serve immediately and refrigerate any leftovers.
