Cake:
2 c. sugar
4 large eggs
1 c. vegetable oil
3 c. flour
1 tsp salt
1 tsp baking soda
3 c. thinly slice apples
1 c. chopped pecans or walnuts

Frosting:
½ c. granulated sugar
½ c. firmly packed light brown sugar
4 TBSP butter
¼ c. evaporated milk
1 tsp vanilla

Directions:
Do not preheat the oven. Spray a 13x9 inch pan with nonstick cooking spray, set aside.
In large bowl, beat sugar, eggs and oil at meduym speed until smooth. in a separate bowl, sift together flour, salt and baking soda. Stir flour mixture into egg mixture until thoroughly combined. Add apple and nuts to batter. Gently stir until combined, spread batter in prepared pan. Place pan in a cold oven and bake at 325º for 50-55 minutes. Let cool in pan. Pour warm caramel topping over cake in pan. Cut into squares and garnish with pecan halves.

For topping:
In small saucepan bring sugars, butter and milk to a boil over medium-high heat. Cook, stirring constantly, for 2 minutes. Stir in vanilla.

I made this when Grandma Yvonne came to visit for Thanksgiving 2022 and she loved it. It is very tasty! Although Honeycrisp are my favorite apples to eat, when baking I prefer to us Granny Smith's like Grandma Yvonne always does. I will never forget the fun with had this Thanksgiving playing games with the four of us, Grandma, Mike and Ro. It was truly one of the best holidays EVER!
